Green bean color: The sun drying method is to dry the picked coffee cherry fruit to reduce the moisture content. The drying period is about 20-40 days, and then the dried peel, pulp, pectin and parchment are removed by the sheller. The washing method is to remove the pectin from the pulp first, then dry it in the sun to reduce the moisture content, and finally remove the inner shell (that is, the parchment paper we often say). The color of the raw beans obtained by this series of operations will be greenish green.
After the peel and pulp pectin is removed by water washing, the coffee beans with reduced moisture content are prepared for drying.
Roasted beans: The silver skin of the coffee beans treated by the sun method is relatively more complete, and there is almost no silver skin remaining on the surface of the cooked beans. The washed coffee beans will have silver skin on the central line of the cooked beans obtained after roasting.
